Zucchini Patties

Our local store had zucchini on sale so I remembered the zucchini pattie recipe.
We actually took this recipe and doubled it for dinner tonight. The patties made a good size pancake. I suggested that we go to the farmers market and purchase enough zucchini to spend part of a day making and freezing them for future use.

2 Eggs, slightly beaten
1/4 cup chopped Onion
1/2 cup Bisquick mix
1/4 cup Parmesan Cheese
Salt & Pepper to taste
2 Cups Shredded Zucchini

Use a food processor to shredd the zucchini. Mix all ingredients. In a frying pan add enough oil to coat bottom of frying pan or use cooking spray. Using a ladle, pour mixture into frying pan as if making pancakes. Fry each side until brown. Serve plain or with sour cream.

Kayla and I love these. Adam and Scotte not so much. We usually have Dad make them for us when we visit, or he comes here, but that has been awhile. We actually were just discussing making our own. Now that Kayla has moved back home, we will have to do this on a Sat morn. --Viva
